I'm good at video editing but I don't know what to sell.

Editing is a skill, not a business yet — the business is whose problem you solve with it. Three directions that are genuinely different: short-form for local service businesses, long-form for one niche of creators, or a done-for-you package for course sellers. The first has the shortest path to a paying customer because the buyer is easy to find and already has budget. Who do you already have some access to?

Gyms, kind of. I messaged 6 local gym owners and 4 said they can't keep up with posting.

That's a real signal, and worth keeping — 4 out of 6 owners naming the same problem unprompted is a reason to keep going down this road. It isn't proof they'll pay. Nobody has been quoted a price yet, and "I can't keep up" is a complaint, not a purchase. The next thing worth finding out is what they currently spend on it, if anything.

Logged as what was said, not as proof anyone will pay.

Okay. I want to actually do this one.

Then let's make it the one. I'll set it up as your business so everything after this — the evidence you've got, what you still have to prove, what you do tomorrow — hangs off it instead of living in a chat. First thing to prove: that a gym will pay a monthly fee for this. Not that they like it.
